Wedding Health Kick
Losing weight for my wedding has been a long process because I am finally doing it the right way... NO CRASH DIETS. It's taken me 27 years to realize, that's just not the right way to do it. I tried Atkins about 5 years ago and lost 30 pounds. Hey, it worked, but I gained it all back and have never been able to do Atkins again. It just hasn't worked and it's way too difficult to not eat carbs. So, I eat carbs, and do it the right way. I've been trying a lot of new recipes and I wanted to share with you one I tried this weekend. Kale Chips. Just looking at kale made me sick, but I wanted to try it and what better way than chips?
If you prepare them the right way, they come out crispy and crunchy. They just crumble in your mouth and give you the crunchy chip sensation you're looking for on a diet when you can't eat greasy chips.

Here's what I did:
1. 1 bunch of Kale rinsed and chopped into bite sized peices
2. 1 tablespoon of olive oil to coat the kale. Don't use more than this. Too much olive oil will leave the chips limp and chewey.
3. lay out kale on a lined baking sheet
4. sprinkle red chili flakes, cayenne, and sea salt evenly over the top. A light sprinkle will do! Don't use the chili flakes or cayenne if you don't like spicy stuff.
5. Bake on middle rack, 350 degress for 12-14 minutes. After 6 minutes, mix them around for even baking. Watch them closly, they burn easily.
They will turn out crunchy and delicious. If they are too chewey, you used too much olive oil. Hope you enjoy a light, healthy, delicious snack! Totally Guilt FREE!
